Our Quality

The special care we give to our vines through pruning of the branches, extensive work on the leaves and the removal of immature grape bunches (green harvest) are the important prerequisites for the quality of our burgundy wines. In the summer 60% of the grape bunches in the upper third of the vines are cut off (grape thinning). This leads to loosely hanging grape clusters, which promotes the integrity and health of the fruit. Furthermore, we continuously optimize the composition of the soil by carefully working on the humus. When the healthy grapes have reached their physiological maturity, we harvest them exclusively by hand, if necessary in several steps.
